It is a rare conger eel dried overnight.
We use conger eels from Tsushima, Nagasaki Prefecture. It is a refreshing white meat with fat on it.
It can be baked as it is, or it goes well with tempura and pots.
I don't care about the bones because I cut the bones one by one.


All of our overnight drying is [two-stage preparation] using salt with plenty of sea minerals.

Take the soup stock with kelp from Hokkaido and soak it.
